Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup low-sodium soy sauce
- 1/4 cup bourbon
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp cornstarch
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 1/4 tsp crushed red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
- 1 tbsp sesame seeds (optional, for garnish)
Instructions
- Place the chicken thighs into the crockpot.
- In a medium bowl, whisk together soy sauce, bourbon, ketchup, brown sugar, apple cider vinegar, garlic, ground ginger, and red pepper flakes.
- Pour the sauce over the chicken and stir to coat.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
- Mix the cornstarch with 2 tablespoons of water to create a slurry, then stir it into the crockpot 30 minutes before serving to thicken the sauce.
- Serve the chicken over rice and garnish with chopped green onions and sesame seeds if desired.
Notes
- Chicken breasts can be used, but thighs are more flavorful and stay juicier.
- If you prefer a stronger bourbon flavor, add an extra tablespoon near the end of cooking.
