Description

Crockpot Bourbon Chicken is a sweet, savory, and slightly tangy dish made with tender chicken slow-cooked in a flavorful bourbon-infused sauce. Perfect for busy weeknights or meal prep.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp cornstarch
  • 2 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)


Instructions

  1. Place the chicken thighs into the crockpot.
  2. In a medium bowl, whisk together soy sauce, bourbon, ketchup, brown sugar, apple cider vinegar, garlic, ground ginger, and red pepper flakes.
  3. Pour the sauce over the chicken and stir to coat.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  5. Mix the cornstarch with 2 tablespoons of water to create a slurry, then stir it into the crockpot 30 minutes before serving to thicken the sauce.
  6. Serve the chicken over rice and garnish with chopped green onions and sesame seeds if desired.

Notes

  • Chicken breasts can be used, but thighs are more flavorful and stay juicier.
  • If you prefer a stronger bourbon flavor, add an extra tablespoon near the end of cooking.
  • This dish stores well in the fridge for up to 4 days and is freezer-friendly.
