A delicious and easy slow cooker recipe featuring tender beef and broccoli in a savory garlic and soy sauce-based sauce. Perfect for busy weeknights or meal prep.
Ingredients
- 1 1/2 lbs flank steak, thinly sliced
- 1 cup beef broth
- 1/2 cup low-sodium soy sauce
- 1/3 cup brown sugar
- 1 tablespoon sesame oil
- 3 garlic cloves, minced
- 1/4 cup cornstarch
- 2 tablespoons water
- 3 cups broccoli florets
- Cooked white rice, for serving
- Optional: sesame seeds and green onions, for garnish
Instructions
- In a slow cooker, whisk together beef broth, soy sauce, brown sugar, sesame oil, and garlic.
- Add the sliced flank steak and stir to coat with the sauce.
- Cover and cook on low for 4-5 hours or until the beef is tender.
- In a small bowl, mix cornstarch and water to make a slurry.
- Stir the slurry into the slow cooker and add the broccoli florets.
- Cover and cook on high for an additional 30 minutes or until the sauce has thickened and broccoli is tender-crisp.
- Serve over white rice and garnish with sesame seeds and green onions if desired.
Notes
- You can use frozen broccoli, just add it directly without thawing to avoid overcooking.
- For a spicier version, add red pepper flakes or a dash of sriracha.
- Store leftovers in an airtight container in the fridge for up to 3 days.
