Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bell pepper, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 8 oz penne or fettuccine pasta
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning, paprika, salt, and pepper.
- Place the chicken in the crock pot and top with sliced bell pepper, onion, and garlic.
- Add cream of chicken soup and chicken broth over the top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and tender.
- Remove chicken, shred it, and return to the crock pot.
- Add cream cheese and Parmesan cheese. Stir until well combined and creamy.
- Meanwhile, cook the pasta according to package instructions, then drain.
- Stir cooked pasta into the crock pot and mix well to coat with the sauce.
- Drizzle with olive oil if desired, and garnish with chopped parsley before serving.

- Use rotisserie chicken for a quicker version.
- Penne, rotini, or fettuccine all work well in this dish.
