Description

A flavorful and creamy Cajun-style chicken pasta made effortlessly in the crock pot. Perfectly spiced chicken breasts are slow-cooked and combined with a rich, cheesy sauce and tender pasta for a comforting weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne or fettuccine pasta
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts with Cajun seasoning, paprika, salt, and pepper.
  2. Place the chicken in the crock pot and top with sliced bell pepper, onion, and garlic.
  3. Add cream of chicken soup and chicken broth over the top.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  5. Remove chicken, shred it, and return to the crock pot.
  6. Add cream cheese and Parmesan cheese. Stir until well combined and creamy.
  7. Meanwhile, cook the pasta according to package instructions, then drain.
  8. Stir cooked pasta into the crock pot and mix well to coat with the sauce.
  9. Drizzle with olive oil if desired, and garnish with chopped parsley before serving.

  • Use rotisserie chicken for a quicker version.
