Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- Vegetable oil for frying
Instructions
- Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness using a meat mallet.
- In one bowl, whisk together flour, salt, garlic powder, and black pepper.
- In a second bowl, beat the eggs and mix in the lemon juice.
- In a third bowl, combine the breadcrumbs with lemon zest.
- Dip each chicken breast into the flour mixture, then the egg mixture, and finally the breadcrumbs, pressing the breadcrumbs onto the chicken to coat evenly.
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the chicken cutlets for 3-4 minutes per side, or until golden brown and cooked through.
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve with extra lemon wedges and enjoy!

- Make sure to pound the chicken evenly for consistent cooking.
- If you prefer a spicier version, add cayenne pepper to the flour mixture.
