Description
Juicy garlic‑butter steak bites paired with crispy seasoned potatoes, all coated in a rich garlic herb sauce—ready in about 30 minutes.
Ingredients
- 2 lbs sirloin or strip steak, cut into 1″ cubes
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 2 tbsp olive oil (for potatoes)
- 2 tbsp olive oil (for steak)
- 6 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp paprika
- 2 tsp Italian seasoning
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped
- Optional: red pepper flakes for garnish
Instructions
- Preheat oven or air fryer to 425 °F (or 400 °F if using air fryer).
- Toss cubed potatoes with 2 tbsp olive oil, paprika, garlic powder, onion powder, half the Italian seasoning, salt & pepper. Roast until golden and crispy (≈15–20 min oven; 10+7 min air fryer), shaking halfway.
- Season steak cubes with olive oil, salt, pepper, garlic powder, remaining Italian seasoning.
- In a skillet or air fryer, cook steak cubes over medium‑high heat until seared to desired doneness (≈5–7 min total).
- Meanwhile, mix softened butter with minced garlic and parsley.
- Toss cooked steak bites and potatoes with garlic‑herb butter until well coated.
- Garnish with extra parsley and red pepper flakes, then serve hot.
Notes
- For faster potato cooking, par‑boil 5 min before roasting.
- Cast iron skillet gives best sear.
- Can swap with ghee for dairy‑free.
- Store leftovers up to 3 days; reheat in skillet or oven.
