Description

Juicy garlic‑butter steak bites paired with crispy seasoned potatoes, all coated in a rich garlic herb sauce—ready in about 30 minutes.


Ingredients

  • 2 lbs sirloin or strip steak, cut into 1″ cubes
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 2 tbsp olive oil (for potatoes)
  • 2 tbsp olive oil (for steak)
  • 6 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Optional: red pepper flakes for garnish


Instructions

  1. Preheat oven or air fryer to 425 °F (or 400 °F if using air fryer).
  2. Toss cubed potatoes with 2 tbsp olive oil, paprika, garlic powder, onion powder, half the Italian seasoning, salt & pepper. Roast until golden and crispy (≈15–20 min oven; 10+7 min air fryer), shaking halfway.
  3. Season steak cubes with olive oil, salt, pepper, garlic powder, remaining Italian seasoning.
  4. In a skillet or air fryer, cook steak cubes over medium‑high heat until seared to desired doneness (≈5–7 min total).
  5. Meanwhile, mix softened butter with minced garlic and parsley.
  6. Toss cooked steak bites and potatoes with garlic‑herb butter until well coated.
  7. Garnish with extra parsley and red pepper flakes, then serve hot.

Notes

  • For faster potato cooking, par‑boil 5 min before roasting.
  • Cast iron skillet gives best sear.
  • Can swap with ghee for dairy‑free.
  • Store leftovers up to 3 days; reheat in skillet or oven.
