Description

A rich and comforting one‑pan meal combining Italian sausage and cheese tortellini in a creamy tomato sauce, ready in under 30 minutes.


Ingredients

  • 1 lb Italian sausage (casings removed)
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • 1 (14.5 oz) can diced tomatoes with juices
  • ½ cup heavy cream
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach
  • 1 cup freshly grated Parmesan cheese
  • Salt & pepper, to taste


Instructions

  1. Heat olive oil in a large skillet over medium‑high heat. Add sausage and cook, breaking it up, until browned, about 5–7 minutes.
  2. Add diced onion and sauté 1–2 minutes until softened. Stir in minced garlic and cook 30 sec until fragrant.
  3. Sprinkle in Italian seasoning and red pepper flakes, stirring to combine.
  4. Pour in diced tomatoes and heavy cream, bring to a gentle simmer.
  5. Add tortellini to the skillet and cook, stirring occasionally, 5–9 minutes (depending on fresh or frozen) until pasta is tender and sauce thickens.
  6. Stir in spinach and Parmesan, cook until spinach wilts and cheese melts. Season with salt & pepper to taste.
  7. Serve immediately, garnished with extra Parmesan or parsley if desired.

  • Use hot Italian sausage or extra red pepper flakes for added heat.
  • Substitute half‑and‑half for a lighter sauce (may slightly thin consistency).
