A rich and comforting one‑pan meal combining Italian sausage and cheese tortellini in a creamy tomato sauce, ready in under 30 minutes.
Ingredients
- 1 lb Italian sausage (casings removed)
- 1 tbsp olive oil
- ½ cup diced onion
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ¼ tsp red pepper flakes (optional)
- 1 (14.5 oz) can diced tomatoes with juices
- ½ cup heavy cream
- 1 lb cheese tortellini (fresh or frozen)
- 2 cups fresh spinach
- 1 cup freshly grated Parmesan cheese
- Salt & pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium‑high heat. Add sausage and cook, breaking it up, until browned, about 5–7 minutes.
- Add diced onion and sauté 1–2 minutes until softened. Stir in minced garlic and cook 30 sec until fragrant.
- Sprinkle in Italian seasoning and red pepper flakes, stirring to combine.
- Pour in diced tomatoes and heavy cream, bring to a gentle simmer.
- Add tortellini to the skillet and cook, stirring occasionally, 5–9 minutes (depending on fresh or frozen) until pasta is tender and sauce thickens.
- Stir in spinach and Parmesan, cook until spinach wilts and cheese melts. Season with salt & pepper to taste.
- Serve immediately, garnished with extra Parmesan or parsley if desired.
Notes
- Use hot Italian sausage or extra red pepper flakes for added heat.
- Substitute half‑and‑half for a lighter sauce (may slightly thin consistency).
- Add vegetables like mushrooms or bell peppers with the onions for more variety.
