Description
Creamy Taco Soup is a hearty and comforting dish made with ground beef, beans, corn, and a creamy tomato base. It’s packed with Tex-Mex flavors and perfect for a quick family dinner or cozy night in.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (8 oz) tomato sauce
- 1 cup chicken broth
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a little olive oil over medium heat. Add chopped onion and garlic and sauté until softened.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning and cook for another minute.
- Add diced tomatoes, black beans, corn, tomato sauce, and chicken broth. Stir to combine.
- Bring to a simmer and let cook for 10–15 minutes to blend flavors.
- Reduce heat to low and stir in cream cheese until melted and fully incorporated.
- Add sour cream and stir well. Adjust salt and pepper to taste.
- Simmer for another 5 minutes, then serve hot with your favorite toppings.
Notes
- Top with shredded cheese, cilantro, or avocado for extra flavor.
- Can be made ahead and stored in the refrigerator for up to 3 days.
- Use ground turkey or chicken as a leaner alternative to beef.
