Description

Creamy Taco Soup is a hearty and comforting dish made with ground beef, beans, corn, and a creamy tomato base. It’s packed with Tex-Mex flavors and perfect for a quick family dinner or cozy night in.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (8 oz) tomato sauce
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a little olive oil over medium heat. Add chopped onion and garlic and sauté until softened.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Stir in taco seasoning and cook for another minute.
  4. Add diced tomatoes, black beans, corn, tomato sauce, and chicken broth. Stir to combine.
  5. Bring to a simmer and let cook for 10–15 minutes to blend flavors.
  6. Reduce heat to low and stir in cream cheese until melted and fully incorporated.
  7. Add sour cream and stir well. Adjust salt and pepper to taste.
  8. Simmer for another 5 minutes, then serve hot with your favorite toppings.

Notes

  • Top with shredded cheese, cilantro, or avocado for extra flavor.
  • Can be made ahead and stored in the refrigerator for up to 3 days.
  • Use ground turkey or chicken as a leaner alternative to beef.
