Creamy Smothered Chicken and Rice is a comforting and hearty dish featuring tender chicken breasts simmered in a rich, creamy sauce served over fluffy rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons cream cheese
- 2 cups cooked white rice
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- Season the chicken breasts with salt, pepper, paprika, thyme, and cayenne pepper if using.
- In a large skillet over medium heat, heat olive oil and butter. Add chicken breasts and sear for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add chopped onion and sauté until soft. Add garlic and cook for another minute.
- Sprinkle flour over the onions and stir well to coat. Cook for 1-2 minutes.
- Gradually whisk in chicken broth until smooth. Add heavy cream and cream cheese, stirring until the sauce is creamy and smooth.
- Return the chicken to the skillet. Cover and simmer on low heat for 20-25 minutes, or until the chicken is cooked through and tender.
- Serve the chicken and sauce over cooked white rice. Garnish with fresh parsley if desired.
Notes
- Use bone-in chicken thighs for more flavor if preferred.
- Substitute heavy cream with half-and-half for a lighter version.
- Add mushrooms or spinach for extra veggies.
