Ingredients

12 oz pasta (penne or rigatoni work great)

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

1 small yellow onion, finely chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

1 (14.5 oz) can diced tomatoes, undrained

1/2 cup chicken broth

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)
Instructions

Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain and set aside.

In a large skillet over medium heat, heat olive oil. Add sausage and cook, breaking it up with a spoon, until browned and cooked through—about 5-6 minutes.

Add chopped onion and cook until softened, about 3 minutes. Stir in garlic, Italian seasoning, and red pepper flakes. Cook for another minute.

Pour in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes.

Stir in heavy cream and Parmesan cheese. Simmer for another 2-3 minutes, or until the sauce thickens slightly.

Add the cooked pasta and toss until well coated in the sauce. Season with salt and pepper to taste.
