A creamy, herbaceous, and vibrant vegan pasta dish made with a rich Green Goddess sauce packed with fresh herbs, avocado, and lemon. Perfect for a refreshing and wholesome meal.
Ingredients
- 12 oz pasta of choice
- 1 ripe avocado
- 1 cup fresh basil leaves
- 1/2 cup fresh parsley
- 1/4 cup fresh chives
- 2 cloves garlic
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 1/4 cup water (as needed to thin sauce)
- 2 tbsp nutritional yeast
- Salt and pepper to taste
- 1 cup baby spinach
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a blender or food processor, combine avocado, basil, parsley, chives, garlic, lemon juice, olive oil, nutritional yeast, and baby spinach.
- Blend until smooth, adding water as needed to reach desired consistency.
- Season the sauce with salt and pepper to taste.
- Toss the cooked pasta with the Green Goddess sauce until evenly coated.
- Serve immediately, garnished with additional herbs or a sprinkle of nutritional yeast if desired.
