Description

A rich and comforting pasta dish featuring cheese tortellini tossed in a creamy garlic sauce with sautéed spinach and savory sausage.


Ingredients

  • 1 lb cheese tortellini
  • 1 tbsp olive oil
  • 1 lb Italian sausage, casing removed
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and cooked through, breaking it into crumbles as it cooks.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Reduce heat to low. Pour in the heavy cream and add Parmesan cheese. Stir until the cheese is melted and the sauce thickens slightly.
  6. Season with salt, black pepper, and red pepper flakes if using.
  7. Add the cooked tortellini to the skillet and toss gently to coat in the creamy sauce.
  8. Serve warm, garnished with extra Parmesan if desired.

Notes

  • Use mild or spicy sausage depending on your preference.
  • Frozen spinach can be used if fresh is not available; just thaw and squeeze out excess moisture.
  • Add more cream if you prefer a saucier dish.
