- 1 lb cheese tortellini
- 1 tbsp olive oil
- 1 lb Italian sausage, casing removed
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and cooked through, breaking it into crumbles as it cooks.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Reduce heat to low. Pour in the heavy cream and add Parmesan cheese. Stir until the cheese is melted and the sauce thickens slightly.
- Season with salt, black pepper, and red pepper flakes if using.
- Add the cooked tortellini to the skillet and toss gently to coat in the creamy sauce.
- Serve warm, garnished with extra Parmesan if desired.
Notes
- Use mild or spicy sausage depending on your preference.
- Frozen spinach can be used if fresh is not available; just thaw and squeeze out excess moisture.
- Add more cream if you prefer a saucier dish.
