Description

Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring tender lasagna noodles rolled with a savory chicken and cheese filling, topped with pesto Alfredo sauce and baked to perfection.


Ingredients

  • 8 lasagna noodles, cooked and drained
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 cup pesto sauce
  • 1 1/2 cups Alfredo sauce
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a bowl, mix shredded chicken, ricotta, half of the mozzarella, Parmesan, egg, garlic powder, salt, and pepper.
  3. Lay cooked lasagna noodles flat and spread 2-3 tablespoons of the chicken mixture on each.
  4. Roll each noodle up tightly and place seam-side down in the baking dish.
  5. Mix pesto and Alfredo sauce together in a separate bowl.
  6. Pour the sauce evenly over the lasagna roll ups.
  7. Sprinkle the remaining mozzarella cheese on top.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
  9. Garnish with fresh basil if desired and serve hot.

Notes

  • You can use store-bought or homemade pesto and Alfredo sauce.
  • Rotisserie chicken works great for this recipe.
  • These roll ups can be made ahead and frozen before baking.
