Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring tender lasagna noodles rolled with a savory chicken and cheese filling, topped with pesto Alfredo sauce and baked to perfection.
Ingredients
- 8 lasagna noodles, cooked and drained
- 2 cups cooked shredded chicken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 cup pesto sauce
- 1 1/2 cups Alfredo sauce
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a bowl, mix shredded chicken, ricotta, half of the mozzarella, Parmesan, egg, garlic powder, salt, and pepper.
- Lay cooked lasagna noodles flat and spread 2-3 tablespoons of the chicken mixture on each.
- Roll each noodle up tightly and place seam-side down in the baking dish.
- Mix pesto and Alfredo sauce together in a separate bowl.
- Pour the sauce evenly over the lasagna roll ups.
- Sprinkle the remaining mozzarella cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
- Garnish with fresh basil if desired and serve hot.
Notes
- You can use store-bought or homemade pesto and Alfredo sauce.
- Rotisserie chicken works great for this recipe.
- These roll ups can be made ahead and frozen before baking.
