- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, sliced
- Salt and pepper to taste
- 4 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 8 oz fettuccine or pasta of choice
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in chicken broth and heavy cream. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
- Stir in Parmesan cheese and Italian seasoning. Simmer until the sauce is smooth and creamy.
- Add the cooked chicken and pasta to the skillet. Toss to coat well with the sauce.
- Cook for another 2-3 minutes until heated through.
- Garnish with chopped parsley and serve hot.

- Use freshly grated Parmesan for the best flavor and texture.
- Substitute heavy cream with half-and-half for a lighter version.
- Can be made with rotisserie chicken for a quicker meal.
