Juicy chicken breasts smothered in a creamy, tangy cream cheese sauce with herbs and garlic.
Ingredients
- 4 boneless, skinless chicken breasts (about 1½ lbs)
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 4 oz cream cheese, softened
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 tbsp chopped fresh parsley (plus extra for garnish)
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden and cooked through, then remove from skillet and set aside.
- Lower heat to medium, add minced garlic and sauté for about 30 seconds until fragrant.
- Add cream cheese, chicken broth, Parmesan, and Italian seasoning. Stir until smooth and creamy, warming about 2–3 minutes.
- Return chicken to skillet, spoon sauce over top, and simmer for another 2–3 minutes to heat through.
- Sprinkle with chopped parsley before serving.
Notes
- You can substitute spinach or sun-dried tomatoes into the sauce for extra flavor.
- Use low‑fat cream cheese to reduce calories.
- Serve over pasta, rice, or steamed vegetables.
