Description

Juicy chicken breasts smothered in a creamy, tangy cream cheese sauce with herbs and garlic.

Ingredients

  • 4 boneless, skinless chicken breasts (about lbs)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp chopped fresh parsley (plus extra for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden and cooked through, then remove from skillet and set aside.
  3. Lower heat to medium, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add cream cheese, chicken broth, Parmesan, and Italian seasoning. Stir until smooth and creamy, warming about 2–3 minutes.
  5. Return chicken to skillet, spoon sauce over top, and simmer for another 2–3 minutes to heat through.
  6. Sprinkle with chopped parsley before serving.

Notes

  • You can substitute spinach or sun-dried tomatoes into the sauce for extra flavor.
  • Use low‑fat cream cheese to reduce calories.
  • Serve over pasta, rice, or steamed vegetables.
