Ingredients
Scale
Pasta
- 12 oz linguine pasta
Chicken and Sauce
- 1 lb chicken pieces (boneless, skinless thighs or breasts, cut into bite-sized pieces)
- 6 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/4 tsp cayenne pepper
Garnishes
- 2 tbsp chopped fresh parsley
- 2 sliced green onions
- 1/4 cup grated Parmesan cheese, optional
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine pasta and cook according to package instructions until al dente, usually about 9-11 minutes. Drain the pasta, reserving a cup of pasta water.
- Prepare the Chicken: In a large skillet over medium heat, melt 4 tablespoons of butter. Add the chicken pieces in a single layer and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Make Cowboy Butter Sauce: Lower the heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic to the same skillet. Cook garlic until fragrant, about 1 minute. Stir in Worcestershire sauce, Dijon mustard, and cayenne pepper, mixing well to combine and create the sauce.
- Toss Pasta with Sauce and Chicken: Return the cooked chicken to the skillet, then add the drained linguine. Toss everything together, adding reserved pasta water a little at a time as needed to loosen the sauce and coat the pasta evenly.
- Add Fresh Herbs and Onions: Remove the skillet from heat and stir in chopped parsley and sliced green onions for freshness and flavor.
- Serve: Plate the linguine and chicken mixture immediately. Garnish each serving with grated Parmesan cheese if desired. Serve hot.
Notes
- Use boneless, skinless chicken thighs for more juicy, flavorful results.
- Adjust cayenne pepper according to your spice preference.
- Reserve pasta water to help the sauce cling to the linguine.
- Parmesan cheese is optional but adds a delightful savory flavor.
- For gluten-free, substitute linguine with gluten-free pasta.
