A creamy and protein-packed pasta dish made with cottage cheese, garlic, and herbs for a delicious and nutritious meal.
Ingredients
- 8 oz pasta (any type)
- 1 cup cottage cheese
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp dried oregano
- 1/4 cup chopped fresh parsley (optional)
- 1/4 cup reserved pasta water
Instructions
- Cook pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain the pasta.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- In a blender or food processor, combine cottage cheese, Parmesan cheese, salt, pepper, and oregano. Blend until smooth.
- Add the cottage cheese mixture to the skillet with garlic. Stir and cook for 2-3 minutes.
- Add the cooked pasta and reserved pasta water to the skillet. Toss to coat the pasta evenly in the sauce.
- Cook for another 2 minutes until everything is heated through.
- Garnish with chopped parsley if desired and serve warm.
Notes
- You can use whole wheat or gluten-free pasta based on dietary preference.
- Adjust the consistency of the sauce by adding more pasta water if needed.
- For extra protein, add grilled chicken or tofu.
