Description

Ingredients

  • 1 lb ground beef
  • 1 cup cottage cheese
  • 2 tbsp hot honey
  • 1 cup cooked rice or quinoa
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup diced cucumber (optional for topping)
  • 1/4 cup sliced green onions (optional for topping)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  3. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
  4. Prepare rice or quinoa according to package instructions, if not already cooked.
  5. To assemble the bowls, divide the rice or quinoa among serving bowls.
  6. Top each bowl with cooked ground beef and a generous scoop of cottage cheese.
  7. Drizzle hot honey over the top of each bowl.
