- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- Fresh lime wedges, for serving
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C) or set your air fryer to 400°F (200°C).
- Shuck the corn and cut each ear into quarters lengthwise to create rib-like strips. Be cautious, as corn can be tough to cut—use a sharp knife and sturdy cutting board.
- In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
- Brush the corn ribs with the seasoning mixture on all sides.
- Place the seasoned corn ribs on a baking sheet lined with parchment paper or in the air fryer basket in a single layer.
- Roast in the oven for 20-25 minutes or air fry for 10-12 minutes, flipping halfway, until the edges are crispy and the corn is tender.
- Remove and serve with fresh lime wedges and chopped cilantro if desired.
Notes
- Be very careful when cutting the corn into ribs—it can be helpful to microwave the corn for a minute to soften it slightly.
- You can experiment with different seasonings such as cumin, cayenne, or grated parmesan.
- Serve with a dipping sauce like aioli or ranch for extra flavor.
