Description

Corn ribs are a fun and flavorful way to enjoy corn on the cob, cut into rib-like strips, seasoned, and roasted or air-fried until crispy and tender.


Ingredients

  • 4 ears of corn
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh lime wedges, for serving
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) or set your air fryer to 400°F (200°C).
  2. Shuck the corn and cut each ear into quarters lengthwise to create rib-like strips. Be cautious, as corn can be tough to cut—use a sharp knife and sturdy cutting board.
  3. In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
  4. Brush the corn ribs with the seasoning mixture on all sides.
  5. Place the seasoned corn ribs on a baking sheet lined with parchment paper or in the air fryer basket in a single layer.
  6. Roast in the oven for 20-25 minutes or air fry for 10-12 minutes, flipping halfway, until the edges are crispy and the corn is tender.
  7. Remove and serve with fresh lime wedges and chopped cilantro if desired.

Notes

  • Be very careful when cutting the corn into ribs—it can be helpful to microwave the corn for a minute to soften it slightly.
  • You can experiment with different seasonings such as cumin, cayenne, or grated parmesan.
  • Serve with a dipping sauce like aioli or ranch for extra flavor.
