- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)

- 1/4 teaspoon black pepper
- Fresh lime wedges, for serving
- Chopped fresh cilantro, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
- Carefully cut each ear of corn lengthwise into quarters to create rib-like pieces.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
- Brush the seasoning mixture onto all sides of the corn ribs.
- Place the corn ribs on a baking sheet lined with parchment paper or directly on the grill.
- Roast in the oven for 20–25 minutes or grill for 10–15 minutes, turning occasionally, until the edges are crispy and the corn is tender.
- Serve with fresh lime wedges and garnish with chopped cilantro if desired.
Notes
- Use a sharp knife and steady hand when cutting the corn ribs to avoid injury.
- Air fryer can also be used for a crispier texture—cook at 375°F for about 10 minutes.
- Serve with dipping sauces like aioli or spicy mayo for added flavor.
