Description

Corn ribs are a fun and flavorful way to enjoy corn on the cob, sliced into rib-like pieces, seasoned, and roasted or grilled to crispy perfection.


Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh lime wedges, for serving
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
  2. Carefully cut each ear of corn lengthwise into quarters to create rib-like pieces.
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
  4. Brush the seasoning mixture onto all sides of the corn ribs.
  5. Place the corn ribs on a baking sheet lined with parchment paper or directly on the grill.
  6. Roast in the oven for 20–25 minutes or grill for 10–15 minutes, turning occasionally, until the edges are crispy and the corn is tender.
  7. Serve with fresh lime wedges and garnish with chopped cilantro if desired.

Notes

  • Use a sharp knife and steady hand when cutting the corn ribs to avoid injury.
  • Air fryer can also be used for a crispier texture—cook at 375°F for about 10 minutes.
  • Serve with dipping sauces like aioli or spicy mayo for added flavor.
