Description

A rich, protein-packed twist on the classic Oh Henry bar—combining collagen, protein powder, nougat-like base, caramel, peanuts, and a dark chocolate coating.


Ingredients

  • 1 cup collagen peptides (or plant‑based protein powder)
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup almond flour
  • 2 Tbsp coconut oil, melted
  • 2 Tbsp honey or maple syrup (or sugar‑free syrup)
  • 1 tsp vanilla extract
  • 1/2 cup chopped roasted peanuts
  • 1/2 cup soft caramel bits
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (for melting chocolate)


Instructions

  1. In a bowl, mix collagen + protein powder + almond flour.
  2. Add melted coconut oil, syrup, and vanilla; stir into a thick dough.
  3. Fold in chopped peanuts and caramel bits.
  4. Press into a parchment‑lined small loaf pan, packing firmly.
  5. Freeze 20–30 min until firm.
  6. Melt chocolate chips with 1 tsp coconut oil in a double boiler or microwave (30 sec bursts, stirring).
  7. Remove slab, slice into 6–8 bars.
  8. Dip bars or spoon melted chocolate over each; place on parchment to set.
  9. Chill 10–15 min until chocolate hardens.
  10. Store in airtight container in fridge up to one week.
