Description

Classic Stuffed Peppers are a hearty and satisfying dish made with bell peppers filled with a savory mixture of ground beef, rice, tomatoes, and seasonings, then baked to perfection.


Ingredients

  • 6 large bell peppers, tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cooked white rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until softened.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Place hollowed-out bell peppers in a baking dish and spoon the beef and rice mixture into each pepper.
  6. Pour tomato sauce over the stuffed peppers and cover the dish with foil.
  7. Bake for 35 minutes. Remove foil, top each pepper with shredded cheese, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  8. Remove from oven and let rest for a few minutes before serving.

Notes

  • You can substitute ground beef with ground turkey or chicken.
  • Use brown rice or quinoa for a healthier option.
  • Leftovers can be stored in the fridge for up to 3 days.
