Description
Delicious churro bars with a cinnamon-sugar crust and soft, buttery center — the perfect festive dessert for Cinco de Mayo.

- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs
- 1 tbsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup granulated sugar (for topping)
- 1 tbsp ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease well.
- In a large bowl, mix melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs and vanilla extract, stirring until combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Spread the batter evenly into the prepared pan.
- In a small bowl, combine 1/4 cup granulated sugar and 1 tbsp cinnamon. Sprinkle evenly over the top of the batter.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan before slicing into bars.
Notes
- For extra gooey bars, bake closer to 25 minutes.
- Add a drizzle of caramel or a scoop of vanilla ice cream for extra indulgence.
- Store leftovers in an airtight container at room temperature for up to 3 days.
