Description

A refreshing and zesty pasta salad tossed with a creamy cilantro-lime dressing, perfect for picnics and summer gatherings.


Ingredients

  • 12 oz pasta (rotini or bow-tie)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup lime juice (about 2 limes)
  • 1/2 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado, diced

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a blender or food processor, blend sour cream, mayonnaise, lime juice, cilantro, garlic, cumin, salt, and black pepper until smooth.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, red onion, and corn.
  4. Pour the cilantro-lime dressing over the pasta mixture and toss to coat evenly.
  5. Gently fold in the diced avocado.
  6. Refrigerate for at least 30 minutes before serving for best flavor.
