- 12 oz pasta (rotini or bow-tie)
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup lime juice (about 2 limes)
- 1/2 cup fresh cilantro, chopped
- 1 clove garlic, minced
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 avocado, diced
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
- In a blender or food processor, blend sour cream, mayonnaise, lime juice, cilantro, garlic, cumin, salt, and black pepper until smooth.
- In a large bowl, combine the cooked pasta, cherry tomatoes, red onion, and corn.
- Pour the cilantro-lime dressing over the pasta mixture and toss to coat evenly.
- Gently fold in the diced avocado.
- Refrigerate for at least 30 minutes before serving for best flavor.
Notes
- Use Greek yogurt instead of sour cream for a lighter option.
- Add grilled chicken or shrimp for extra protein.
