Ingredients
Scale
Salmon and Glaze
- 1 side of salmon (about 2–2.5 pounds)
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup or honey
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish and Serving
- 1/4 cup pomegranate seeds
- 2 tablespoons chopped fresh parsley or dill
- Lemon wedges, for serving
Instructions
- Prepare the Oven and Baking Sheet: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil, then lightly grease it to prevent sticking.
- Position the Salmon: Place the salmon side down (skin side down) onto the prepared baking sheet, ensuring it lays flat for even cooking.
- Make the Glaze: In a small bowl, whisk together the olive oil, Dijon mustard, maple syrup or honey, minced garlic, chopped rosemary, thyme leaves, salt, and black pepper until well combined.
- Apply the Glaze: Brush the mixture evenly over the top of the salmon, covering it generously for maximum flavor.
- Bake the Salmon: Place the baking sheet in the oven and bake for 15–20 minutes, or until the salmon flakes easily when tested with a fork and the internal temperature reaches 145°F (63°C).
- Rest and Garnish: Remove the salmon from the oven and let it rest for 5 minutes to retain moisture. Then sprinkle the pomegranate seeds and chopped fresh parsley or dill on top for a festive touch.
- Serve: Serve the salmon warm accompanied by lemon wedges to squeeze over each portion, enhancing the flavors.
