Description

A rich and decadent twist on the classic tres leches cake, this Chocolate Tres Leches Cake is soaked in a blend of three milks and topped with whipped cream for a luscious dessert experience.


Ingredients

  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup whole milk or heavy cream
  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or cocoa powder, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, beat egg yolks with 3/4 cup sugar until pale and thick. Stir in milk and vanilla extract.
  4. Gradually fold in the dry ingredients until just combined.
  5. In another bowl, beat egg whites to soft peaks. Gradually add remaining 1/4 cup sugar and beat to stiff peaks.
  6. Gently fold the egg whites into the chocolate batter in batches until fully incorporated.
  7. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  8. Let the cake cool for 10 minutes. Poke holes all over the cake with a skewer or fork.
  9. In a bowl, whisk together evaporated milk, sweetened condensed milk, and 1/2 cup milk or cream. Pour evenly over the cake.
  10. Refrigerate for at least 4 hours or overnight to absorb the milk mixture.
  11. Whip heavy cream with powdered sugar until stiff peaks form. Spread over the chilled cake.
  12. Garnish with chocolate shavings or dust with cocoa powder before serving.
