Instructions

  1. Prepare the dates: Place chopped dates in a bowl and pour boiling water over them. Stir in baking soda and let sit for 10 minutes to soften the dates, which will help create a moist and flavorful pudding.
  2. Make the batter: In a mixing bowl, cream together softened butter and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, folding in the softened dates (including the soaking liquid) and chocolate chips if using, to combine evenly.
  3. Bake the pudding: Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish or individual ramekins. Pour the batter into the prepared dish and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean, signaling the pudding is cooked through.
