Description

These Chocolate Peanut Butter Cookie Dough Bites are a no-bake treat that’s soft, sweet, and packed with peanut butter flavor. They’re made with simple pantry ingredients, take just minutes to mix up, and are perfect for snacking or dessert. Plus, they’re safe to eat raw!


Ingredients

  • 1 cup creamy peanut butter

  • 1/2 cup maple syrup (or honey)

  • 1 tsp vanilla extract

  • 1 1/4 cups almond flour

  • 1/4 tsp salt

  • 1/2 cup mini chocolate chips

  • 1/2 cup semi-sweet chocolate chips (for coating, optional)

  • 1 tsp coconut oil (for melting chocolate, optional)


Instructions

  1. In a large bowl, mix together the peanut butter, maple syrup, and vanilla extract until smooth.

  2. Stir in the almond flour and salt until a dough forms.

  3. Fold in the mini chocolate chips.

  4. Scoop out small portions and roll into bite-sized balls.

  5. (Optional) To coat in chocolate: melt the semi-sweet chocolate chips and coconut oil in the microwave in 30-second bursts, stirring in between.

  6. Dip each bite in melted chocolate and place on a parchment-lined tray.

  7. Chill in the fridge for 20–30 minutes until firm.

  8. Store in an airtight container in the fridge for up to a week.


Notes

  • You can swap almond flour for oat flour for a nut-free version.

  • Add a pinch of sea salt on top after dipping in chocolate for extra flavor.

  • These freeze well – just let them thaw for a few minutes before enjoying.
