Instructions
- Prepare the filling dough: In a mixing bowl, combine powdered sugar, softened butter, peppermint extract, cream, and a pinch of salt. Mix thoroughly until a smooth, thick dough forms, adjusting the consistency by adding more powdered sugar if too sticky or a few drops of cream if too dry.
- Shape the patties: Roll the dough into 1-inch balls and then flatten each slightly into disc shapes. Arrange the patties on a parchment-lined tray and place them in the freezer for 20 to 30 minutes until firm.
- Melt the chocolate coating: While the patties chill, melt the chocolate chips together with coconut oil or shortening (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly between each until the mixture is smooth and fully melted.
- Dip the patties: Remove the chilled mint patties from the freezer. Dip each patty into the melted chocolate coating, allowing excess chocolate to drip off. Place the coated patties back onto the parchment-lined tray.
- Set the chocolate: Refrigerate the chocolate-covered mint patties until the chocolate coating is fully set and firm, ready to serve or package.
