Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the casserole evenly.
  2. Cook Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces along with Italian seasoning, garlic powder, salt, and black pepper. Cook for about 5–6 minutes, stirring occasionally until the chicken is browned and almost cooked through.
  3. Combine Vegetables and Chicken: In a large mixing bowl, add the chopped zucchini, red bell pepper, sliced red onion, and halved cherry tomatoes. Add the cooked chicken to the bowl and toss all the ingredients together until well combined.
