Description

Chicken Salad Bites are a quick and delicious appetizer made with tender chicken salad served on top of crunchy crackers or cucumber slices—perfect for parties or snacking.

Ingredients

Units Scale
  • 2 cups cooked chicken, shredded or chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 celery stalk, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Crackers or cucumber slices for serving

Instructions

  1. In a large bowl, combine the shredded chicken, mayonnaise, and Dijon mustard.
  2. Add the chopped celery, red onion, and parsley. Mix well until evenly combined.
  3. Season with salt and pepper to taste.
  4. Spoon about a tablespoon of the chicken salad mixture onto each cracker or cucumber slice.
  5. Arrange on a platter and serve immediately or chill until ready to serve.

Notes

  • You can substitute Greek yogurt for mayonnaise for a lighter option.
  • Prepare the chicken salad in advance and assemble just before serving to keep bites crisp.
  • Optional: Add a sprinkle of paprika or a slice of grape for added flavor and presentation.
