Description
A classic Italian-American dish featuring breaded chicken breasts topped with marinara sauce and melted cheese, served over pasta or on its own.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh basil (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegetable oil (for frying)
- Spaghetti or pasta of choice, for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Slice each chicken breast in half horizontally to make 4 cutlets. Pound to even thickness if needed.
- Season chicken with salt and pepper.
- Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan in a third.
- Dredge each chicken cutlet in flour, dip in egg, then coat in breadcrumb mixture.
- Heat oil in a skillet over medium-high heat. Fry chicken until golden and cooked through, about 4 minutes per side. Drain on paper towels.
- Place fried chicken in a baking dish. Top each with marinara sauce and mozzarella cheese.
- Bake for 15-20 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil if desired. Serve hot over pasta or on its own.
Notes
- Use freshly grated Parmesan for best flavor.
- Chicken can be prepared ahead and refrigerated before baking.
- Try adding a sprinkle of red pepper flakes for heat.
