Description

This Chicken Chipotle recipe features juicy chicken breasts marinated in a smoky, spicy chipotle sauce, then grilled or pan-seared to perfection for a bold and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tbsp adobo sauce
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a bowl, whisk together chipotle peppers, adobo sauce, olive oil, lime juice, garlic, cumin, paprika, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Marinate in the refrigerator for at least 30 minutes, up to 8 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and cook for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before slicing.
  6. Garnish with fresh cilantro and serve with rice, salad, or tortillas as desired.

Notes

  • Adjust the number of chipotle peppers to your preferred spice level.
  • This recipe also works well with chicken thighs.
  • Leftovers make great additions to tacos, salads, or wraps.
