Description
This Chicken Chipotle recipe features juicy chicken breasts marinated in a smoky, spicy chipotle sauce, then grilled or pan-seared to perfection for a bold and flavorful meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 chipotle peppers in adobo sauce, minced
- 2 tbsp adobo sauce
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro for garnish (optional)
Instructions
- In a bowl, whisk together chipotle peppers, adobo sauce, olive oil, lime juice, garlic, cumin, paprika, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Marinate in the refrigerator for at least 30 minutes, up to 8 hours.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and cook for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes before slicing.
- Garnish with fresh cilantro and serve with rice, salad, or tortillas as desired.
Notes
- Adjust the number of chipotle peppers to your preferred spice level.
- This recipe also works well with chicken thighs.
- Leftovers make great additions to tacos, salads, or wraps.
