Description

A comforting and hearty one-pot meal featuring tender chicken, fluffy rice, and savory mushrooms. Perfect for a family dinner or meal prep.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms (white or cremini)
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5-6 minutes. Remove and set aside.
  3. In the same pot, sauté onions and garlic for 2-3 minutes until fragrant.
  4. Add mushrooms and cook until softened, about 5 minutes.
  5. Stir in rice, then pour in chicken broth. Add salt, pepper, thyme, and paprika.
  6. Return chicken to the pot and stir to combine.
  7. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  8. Remove from heat and let rest for 5 minutes. Fluff rice with a fork.
  9. Garnish with chopped parsley before serving, if desired.

Notes

  • Use brown rice for a whole grain option; increase cooking time and liquid slightly.
  • Add peas or spinach at the end for extra vegetables.
  • This dish can be made ahead and reheats well.
