  • 12 oz pasta (fettuccine, penne, or your choice)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms, sliced (button or cremini)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. Cook Pasta: Cook the pasta according to package directions in salted water until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set it aside.
  2. Cook Chicken: In a large skillet over medium-high heat, heat olive oil. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 5–6 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Mushrooms and Garlic: In the same skillet, add the sliced mushrooms and cook for 4–5 minutes until softened. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Make Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Reduce heat to medium-low, then add the heavy cream and grated Parmesan cheese. Stir continuously until the sauce thickens slightly, approximately 2–3 minutes.
  5. Combine and Serve: Return the cooked chicken to the skillet and add the cooked pasta. Toss everything together to coat evenly in the creamy sauce. Add reserved pasta water as needed to loosen the sauce to your desired consistency. Garnish with fresh parsley if using and serve warm.

Notes

  • For extra richness, stir in a tablespoon of butter with the cream.
  • You can substitute half-and-half for a lighter cream version.
  • Adding fresh spinach during the mushroom sauté adds nutritious greens.
