Ingredients
Scale
Cheese Mixture
- 1 pound Velveeta cheese, cubed
- 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
- 1/2 cup sour cream
- 1/2 packet ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Garnish and Serving
- 1 tablespoon chopped cilantro (optional)
- Tortilla chips, for serving
Instructions
- Combine Cheese and Rotel: In a medium saucepan over medium heat, add cubed Velveeta cheese and the entire can of Rotel with its juices. Stir frequently to ensure the cheese melts evenly and the mixture becomes smooth without burning.
- Add Seasonings and Cheddar: Reduce the heat to low. Stir in sour cream, ranch seasoning mix, shredded cheddar cheese, garlic powder, and onion powder. Continue cooking for 2 to 3 minutes, stirring constantly, until the queso is creamy and all ingredients are well incorporated.
- Finish and Serve: Remove the saucepan from heat. Stir in chopped cilantro if using. Serve the warm queso immediately with tortilla chips for dipping.
Notes
- For a meatier option, add 1/2 pound cooked ground beef or sausage to the queso.
- This dip can be kept warm in a slow cooker set on low during parties.
- Adjust the amount of ranch seasoning mix to vary the tanginess according to your taste preference.
