Ingredients
- 1.5 lbs baby potatoes, quartered
- 14 oz smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, toss the quartered potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25 minutes, stirring halfway through.
- Add the sliced smoked sausage to the baking sheet and roast for another 15-20 minutes, or until the potatoes are golden and tender.
- Sprinkle shredded cheddar cheese over the potatoes and sausage, then return to the oven for 5 minutes or until cheese is melted and bubbly.
- Remove from oven, garnish with chopped parsley if desired, and serve hot.
Notes
- Use turkey or chicken sausage for a lighter version.
- Try adding bell peppers or onions for extra flavor and nutrition.
- This dish can also be made in a skillet on the stovetop.
