Description
Cheesy Mashed Potato Puffs are delightful bite-sized snacks made from creamy mashed potatoes combined with savory cheddar and Parmesan cheeses, baked to golden perfection. These mini puffs are an excellent way to use leftover mashed potatoes and make a perfect appetizer or side dish with a crispy exterior and soft, cheesy interior.
Ingredients
Scale
Potato Mixture
- 2 cups mashed potatoes (cold or leftover)
- 1 large egg
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped green onions or chives
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
For Greasing
- Nonstick cooking spray or butter (for greasing muffin tin)
Instructions
- Preheat and prepare muffin tin: Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin using nonstick cooking spray or butter to prevent sticking and ensure easy removal of the puffs.
- Mix ingredients: In a large mixing bowl, combine the cold mashed potatoes, egg, shredded cheddar cheese, grated Parmesan cheese, chopped green onions or chives, and all-purpose flour. Season the mixture with salt and freshly ground black pepper. Stir everything until the mixture is well combined and uniform.
- Fill muffin cups: Scoop the potato mixture into the prepared mini muffin cups, filling each about three-quarters full. Press lightly on the tops to gently shape the puffs and compact the mixture.
- Bake: Place the muffin tin in the preheated oven and bake the potato puffs for 20 to 25 minutes, or until the tops are golden brown and crispy. This baking time ensures the puffs cook through and develop a crisp exterior.
- Cool and serve: Once baked, allow the puffs to cool in the muffin tin for about 5 minutes to firm up. Carefully remove them from the tin and serve warm. They make a wonderful snack, appetizer, or side dish.
Notes
- These puffs are a great way to reuse leftover mashed potatoes, reducing food waste.
- You can substitute cheddar cheese with other cheeses like mozzarella or pepper jack to change the flavor profile.
- For an extra crispy top, sprinkle a little additional grated Parmesan cheese on each puff before baking.
