Description

These Cheesy Keto Biscuits are a low-carb, gluten-free delight perfect for those following a ketogenic lifestyle. Featuring a creamy blend of cream cheese, mozzarella, and almond flour, they bake up fluffy and golden brown. Easy to prepare and packed with cheesy goodness, they make a fantastic snack or side dish.

Ingredients

Scale

Cheese Mixture

  • 1 (8-oz) block cream cheese
  • 3 cups shredded mozzarella cheese

Dry Ingredients

  • 4 Tbsp baking powder
  • 1â…“ cups almond flour

Others

  • 4 eggs
  • 2 Tbsp melted butter (plus additional for brushing)
  • Cooking spray (for skillet)

Instructions

  1. Preheat and prepare skillet: Preheat your oven to 400ºF (200ºC). Spray a 12-inch cast iron skillet with cooking spray to prevent sticking and set it aside for later.
  2. Melt cheeses: In a saucepan over low heat, melt the cream cheese and shredded mozzarella together, stirring continuously until the mixture is smooth and fully combined. Remove from heat once done.
  3. Mix dough: In a large bowl, combine the melted cheese mixture with the eggs, baking powder, and almond flour. Stir until the batter is smooth and well incorporated. Let the dough rest for 10 to 20 minutes to allow it to thicken and firm up.
  4. Scoop dough and chill: Using a large cookie scoop, portion the dough into the prepared skillet, forming biscuit shapes. After placing the dough scoops in the skillet, refrigerate for 10 minutes to help them hold their shape during baking.
  5. Bake biscuits: Remove the skillet from the refrigerator and place it in the preheated oven. Bake the biscuits for 20 to 25 minutes, until they turn golden brown and are cooked through.
  6. Brush with butter: Once removed from the oven, immediately brush the warm biscuits with melted butter for added flavor and moisture. Serve warm.

Notes

  • Using a cast iron skillet ensures even baking and a nicely browned crust.
  • Letting the dough rest and chilling it helps the biscuits keep their shape.
  • These biscuits are best enjoyed fresh but can be stored in an airtight container and reheated gently.
  • For a dairy-free version, substitute cream cheese and mozzarella with plant-based alternatives, though texture may vary.
  • The baking powder amount is quite high to help the almond flour biscuits rise and become fluffy.
