Description

Cheesy Fiesta Potatoes are a delicious Taco Bell-inspired side dish made with crispy seasoned potatoes, warm nacho cheese, and a tangy sour cream topping.


Ingredients

  • 3 cups russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1 tablespoon chopped green onions (optional)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Bake for 25–30 minutes or until golden and crispy, flipping halfway through for even cooking.
  5. While the potatoes bake, warm the nacho cheese sauce in a saucepan over low heat or in the microwave.
  6. Remove potatoes from the oven and transfer to a serving dish.
  7. Drizzle warm nacho cheese sauce over the potatoes.
  8. Top with dollops of sour cream and sprinkle with chopped green onions if desired.
  9. Serve hot and enjoy!

  • For extra crispiness, soak potatoes in water for 30 minutes before baking and dry thoroughly.
