Cheesy Fiesta Potatoes are a delicious Taco Bell-inspired side dish made with crispy seasoned potatoes, warm nacho cheese, and a tangy sour cream topping.
Ingredients
- 3 cups russet potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup nacho cheese sauce
- 1/2 cup sour cream
- 1 tablespoon chopped green onions (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Bake for 25–30 minutes or until golden and crispy, flipping halfway through for even cooking.
- While the potatoes bake, warm the nacho cheese sauce in a saucepan over low heat or in the microwave.
- Remove potatoes from the oven and transfer to a serving dish.
- Drizzle warm nacho cheese sauce over the potatoes.
- Top with dollops of sour cream and sprinkle with chopped green onions if desired.
- Serve hot and enjoy!
Notes
- For extra crispiness, soak potatoes in water for 30 minutes before baking and dry thoroughly.
- You can substitute Greek yogurt for sour cream for a lighter option.
