A warm and satisfying sandwich featuring juicy chicken, creamy avocado, and melted cheese—perfect for a quick and delicious meal.
Ingredients
- 2 slices of whole-grain bread
- 1 cooked chicken breast, sliced (about 4 oz)
- ½ ripe avocado, sliced
- 2 slices cheddar cheese (or your favorite melting cheese)
- 1 tbsp mayonnaise
- 1 tsp Dijon mustard
- Butter or olive oil for grilling
- Optional: a few spinach leaves or tomato slices
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread mayonnaise on one slice of bread and Dijon mustard on the other.
- On the mayo side, layer the sliced chicken breast evenly.
- Add the avocado slices on top of the chicken.
- Place the cheese slices over the avocado (add spinach or tomato here if using).
- Top with the second slice of bread, mustard side down.
- Butter the outside of both slices of bread (or brush with olive oil).
- Place the sandwich in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve warm.
Notes
- Use leftover roasted or rotisserie chicken for extra flavor and convenience.
- Swap cheddar for pepper jack or mozzarella for a different taste profile.
- For a crunchier sandwich, add a thin layer of cilantro-lime slaw inside.
- To make it gluten-free, use gluten-free bread.
