- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 (10 oz) can red enchilada sauce
- 1 (14 oz) can diced tomatoes, drained
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until no longer pink. Drain excess fat.
- Add taco seasoning and water. Stir to combine and simmer for 2-3 minutes.
- Add enchilada sauce and drained diced tomatoes. Stir well.
- Stir in cheese tortellini and bring to a simmer. Cover and cook for 5-7 minutes, or until tortellini is tender.
- Sprinkle shredded cheddar and Monterey Jack cheese over the top. Cover until cheese is melted, about 2 minutes.
- Garnish with green onions and cilantro before serving.
Notes
- You can use frozen tortellini, just increase cook time slightly.
- Add black beans or corn for extra texture and flavor.
- Use spicy enchilada sauce if you prefer a kick.
