Ingredients
-
2 tablespoons unsalted butter
-
2 tablespoons all-purpose flour
-
1 cup whole milk
-
1 ½ cups shredded sharp cheddar cheese
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
½ teaspoon salt (adjust to taste)
-
¼ teaspoon ground mustard (optional, for a little tang)
-
A pinch of cayenne pepper (optional, for heat)
Instructions
-
In a medium saucepan over medium heat, melt the butter.
-
Whisk in the flour and cook for about 1 minute, stirring constantly to make a roux.
-
Slowly whisk in the milk, making sure there are no lumps.
-
Cook the mixture for 2–3 minutes, stirring constantly, until it thickens slightly.
-
Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth.
-
Add garlic powder, onion powder, salt, ground mustard, and cayenne if using.
-
Stir to combine, taste, and adjust seasoning as needed.
-
Serve warm with soft pretzels. Reheat gently if needed.
Notes
-
For extra creaminess, stir in 2 oz cream cheese with the cheddar.
-
Swap cheddar for a mix of cheeses like Monterey Jack or Gouda.
-
Keep the dip warm in a mini slow cooker or fondue pot for serving.
-
If dip thickens too much as it sits, add a splash of milk and stir.
