Description

Crispy, golden cauliflower and chicken nuggets served with a tangy Dijon honey mustard dip, perfect as a healthy appetizer or snack.


Ingredients

  • 2 cups cauliflower florets
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Steam cauliflower florets until tender, then finely chop or pulse in a food processor.
  3. In a large bowl, combine cauliflower, ground chicken, breadcrumbs, Parmesan, egg, garlic powder, onion powder, paprika, salt, and pepper.
  4. Mix well and shape into nugget-sized portions.
  5. Place nuggets on the prepared baking sheet and lightly spray with cooking spray or brush with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden and cooked through.
  7. Meanwhile, prepare the dip by mixing Dijon mustard, honey, mayonnaise, and lemon juice in a small bowl.
  8. Serve nuggets hot with Dijon honey mustard dip.

Notes

  • For extra crispiness, broil nuggets for an additional 2-3 minutes after baking.
  • You can substitute ground chicken with ground turkey if preferred.
