- 2 cups cauliflower florets
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- Salt and pepper to taste
- Cooking spray or olive oil
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Steam cauliflower florets until tender, then finely chop or pulse in a food processor.
- In a large bowl, combine cauliflower, ground chicken, breadcrumbs, Parmesan, egg, garlic powder, onion powder, paprika, salt, and pepper.
- Mix well and shape into nugget-sized portions.
- Place nuggets on the prepared baking sheet and lightly spray with cooking spray or brush with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden and cooked through.
- Meanwhile, prepare the dip by mixing Dijon mustard, honey, mayonnaise, and lemon juice in a small bowl.
- Serve nuggets hot with Dijon honey mustard dip.
Notes
- For extra crispiness, broil nuggets for an additional 2-3 minutes after baking.
- You can substitute ground chicken with ground turkey if preferred.
- Store leftovers in an airtight container for up to 3 days.
- Reheat in the oven or air fryer for best texture.
