Description

These Caramel Apple Empanadas are a delicious twist on the classic apple dessert. Sweet, caramelized apples wrapped in a crispy, golden pastry shell make for a perfect treat any time of year. Enjoy them warm with a scoop of vanilla ice cream or a drizzle of extra caramel sauce!


Ingredients

  • 2 medium apples (peeled, cored, and diced)

  • 1/2 cup caramel sauce (store-bought or homemade)

  • 1 tablespoon lemon juice

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 cup sugar (for coating)

  • 1 package (about 10-12) refrigerated empanada dough discs or pie dough (can substitute with store-bought pie dough)

  • 1 egg (beaten, for egg wash)

  • 1 tablespoon butter (melted)


Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a medium saucepan over medium heat, combine the diced apples, caramel sauce, lemon juice, cinnamon, and nutmeg. Cook for about 5-7 minutes, stirring occasionally, until the apples are soft and the mixture has thickened slightly. Remove from heat and let it cool for a few minutes.

  3. Roll out the empanada dough discs on a lightly floured surface. If using pie dough, cut out circles using a biscuit cutter or a cup.

  4. Spoon about 1-2 tablespoons of the caramel apple filling onto the center of each dough circle.

  5. Fold the dough over the filling to create a half-moon shape, sealing the edges by pressing with a fork.

  6. Brush the tops of the empanadas with the beaten egg and lightly sprinkle with sugar.

  7. Place the empanadas on a baking sheet lined with parchment paper.

  8. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.

  9. Once out of the oven, brush the tops with melted butter for extra shine and flavor. Serve warm!


Notes

  • You can drizzle extra caramel sauce over the empanadas after baking for an added touch of sweetness.

 

  • These empanadas can also be fried instead of baked if you prefer a crispier, golden crust.
