A fresh and vibrant Caprese Pasta Salad combining juicy tomatoes, creamy mozzarella, and fragrant basil with pasta, perfect for picnics or summer meals.
Ingredients
- 12 oz (340 g) pasta (fusilli or penne)
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
- 1/2 cup fresh basil leaves, torn
- 1/4 cup extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving for best flavor.
