A flavorful and spicy Cajun chicken dish paired with sweet bell peppers, perfect for a quick and satisfying meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Slice the chicken breasts into thin strips and toss with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, add a bit more oil if needed and sauté the garlic and onion for 2 minutes.
- Add the sliced bell peppers and cook for another 5-7 minutes until they are slightly tender but still crisp.
- Return the chicken to the skillet and stir to combine with the vegetables.
- Season with salt and pepper to taste. Cook for another 2 minutes to heat through.
- Garnish with chopped parsley if desired and serve hot.
Notes
- For extra heat, add crushed red pepper flakes or a dash of hot sauce.
- Serve over rice, pasta, or in wraps for a complete meal.
- Use pre-sliced peppers and onions to save time.
