Description

A flavorful and spicy Cajun chicken dish paired with sweet bell peppers, perfect for a quick and satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Slice the chicken breasts into thin strips and toss with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, add a bit more oil if needed and sauté the garlic and onion for 2 minutes.
  5. Add the sliced bell peppers and cook for another 5-7 minutes until they are slightly tender but still crisp.
  6. Return the chicken to the skillet and stir to combine with the vegetables.
  7. Season with salt and pepper to taste. Cook for another 2 minutes to heat through.
  8. Garnish with chopped parsley if desired and serve hot.

Notes

  • For extra heat, add crushed red pepper flakes or a dash of hot sauce.
  • Serve over rice, pasta, or in wraps for a complete meal.
  • Use pre-sliced peppers and onions to save time.
