Description
These Buffalo Chicken Taquitos are crispy on the outside, creamy and spicy on the inside. Packed with shredded chicken, tangy buffalo sauce, and melty cheese, they’re a crowd-pleaser whether you’re serving them as an appetizer or a main. Super easy to make and great for dipping in ranch or blue cheese!
Ingredients

2 cups cooked, shredded chicken (rotisserie works great)

1/2 cup buffalo wing sauce (like Frank’s RedHot)

4 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped green onions (optional)

8-10 small flour or corn tortillas

Cooking spray or oil for brushing
Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar, mozzarella, and green onions. Mix until well combined.

Warm tortillas in the microwave for 15–20 seconds so they’re easier to roll.

Place 2–3 tablespoons of the filling in the center of each tortilla and roll it up tightly.

Arrange taquitos seam-side down on the baking sheet. Lightly spray or brush the tops with oil.

Bake for 15–18 minutes, or until the taquitos are golden and crispy.

Let cool slightly and serve with ranch or blue cheese dressing.
Notes

Use leftover chicken or rotisserie chicken to save time.

You can make these ahead and freeze them before baking.

Spice level can be adjusted by using more or less buffalo sauce.
