Ingredients
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups cooked chicken breast, shredded
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing (optional)
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the sweet potatoes in an even layer in a greased 9×13 inch baking dish and roast for 20-25 minutes until tender.
- While the sweet potatoes are baking, mix shredded chicken with buffalo sauce and ranch dressing if using.
- Remove the sweet potatoes from the oven and top with the buffalo chicken mixture.
- Sprinkle shredded cheddar cheese over the top and return to oven. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Garnish with chopped green onions and parsley before serving.
