Description

A hearty and flavorful casserole made with tender sweet potatoes, spicy buffalo chicken, and a cheesy topping, perfect for meal prep or a comforting dinner.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked chicken breast, shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing (optional)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes in an even layer in a greased 9×13 inch baking dish and roast for 20-25 minutes until tender.
  4. While the sweet potatoes are baking, mix shredded chicken with buffalo sauce and ranch dressing if using.
  5. Remove the sweet potatoes from the oven and top with the buffalo chicken mixture.
  6. Sprinkle shredded cheddar cheese over the top and return to oven. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  7. Garnish with chopped green onions and parsley before serving.
