Description

This Buffalo Chicken Lasagna combines the spicy tang of buffalo wing sauce with creamy cheeses and tender chicken in a comforting layered casserole, perfect for game day or a hearty family dinner. Oven-ready lasagna noodles make assembly easy, while layers of blue cheese, ricotta, ranch dressing, and shredded mozzarella create a rich and flavorful dish.

Ingredients

Scale

Lasagna Base and Layers

  • 12 sheets lasagna noodles, oven ready
  • 2 cups cooked chicken, shredded
  • ¾ cup buffalo wing sauce
  • ¾ cup ranch dressing
  • 15 ounces diced tomatoes, canned

Cheese Mixture

  • 1 cup ricotta cheese
  • 8 ounces blue cheese, crumbled
  • 1 large egg
  • ¼ cup chopped parsley
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon pepper, or to taste

Topping

  • 4 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the lasagna.
  2. Mix the cheese filling: In a medium bowl, combine ricotta cheese, crumbled blue cheese, the egg, chopped parsley, salt, and pepper. Mix thoroughly until all ingredients are well incorporated then set aside.
  3. Prepare the chicken mixture: In a separate bowl, mix the shredded cooked chicken with buffalo wing sauce, ranch dressing, and diced tomatoes. Stir until the chicken is evenly coated with all the ingredients.
  4. Assemble the lasagna: In a 9×13-inch baking dish, spread a quarter of the chicken mixture evenly on the bottom. Layer 4 oven-ready lasagna noodles over the chicken. Spread another quarter of the chicken mixture evenly over the noodles, followed by one-third of the cheese mixture. Sprinkle about one-third of the shredded mozzarella cheese on top. Repeat these layering steps two more times, finishing with a layer of shredded mozzarella cheese on top.
  5. Bake the lasagna: Cover the dish tightly with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake uncovered for an additional 20 minutes or until the lasagna is bubbly and the noodles are tender.
  6. Serve: Allow the lasagna to cool slightly after baking to set properly. Then slice into portions and serve warm, enjoying the creamy, spicy flavors of this buffalo chicken lasagna.

Notes

  • You can substitute cooked rotisserie chicken to save time.
  • Adjust the amount of buffalo wing sauce according to your preferred spice level.
  • For best results, use oven-ready noodles to skip pre-boiling.
  • Letting the lasagna rest before slicing helps it hold together better.
  • This dish can be prepared a day ahead and refrigerated before baking for convenience.
