For the pancakes:

- 3 tablespoons cold unsalted butter, cubed
For the glaze (optional):
- ½ cup powdered sugar
- 1–2 tablespoons milk
- ¼ teaspoon vanilla extract
Instructions
- Prepare the streusel: In a small bowl, mix together brown sugar, flour, and cinnamon. Cut in the cold, cubed butter using a fork or your fingers until the mixture looks like coarse crumbs. Set this aside while you make the batter.
- Make the pancake batter: In a large bowl, whisk the flour, granulated sugar, baking powder, salt, and cinnamon until evenly combined. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir gently just until combined; avoid overmixing to keep pancakes tender.
- Cook the pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it. Pour ¼ cup of batter onto the pan for each pancake. Immediately sprinkle about 1 tablespoon of the streusel mixture on top of the batter. Cook for 2 to 3 minutes or until bubbles start to form on the surface and edges look set. Carefully flip the pancake and cook for another 2 to 3 minutes until the pancake is golden and cooked through. Repeat this process with the remaining batter and streusel.
- Make the optional glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over warm pancakes before serving.
